Ingredients

Serves 4

  • 1 chicory, quartered and torn

  • 2 your favorite citrus, cut into segments, keep aside 3 tablespoons of the juice

  • 3 oz salami, sliced

  • 2 oz mixed salad

  • 1/3 cup walnuts

Dressing

  • 3 tablespoons olive oil

  • 3 tablespoons reserved orange juice

  • Salt and pepper

Directions

  • Whisk all the dressing ingredients

  • In a large bowl combine all of the salad ingredients. Just before serving add dressing, toss to combine. Serve immediately after tossing with dressing.
