Vegetarian Chili


This is a vegetarian chili made with lots of beans in place of meat. Even with just vegetables, the spices and other ingredients give it a strong flavor, making it very satisfying to eat.


Since it doesn't use meat, it's economical and doesn't require much time. Quick and easy!


Vegetarian chili is not only economical but also packed with nutrients. With this one dish, you can easily get what your body needs, such as protein, fiber, vitamins, and minerals.

Ingredients

Serves 4

  • 1 tablespoon oil

  • 1 onion, chopped

  • 4 garlic cloves, minced

  • 2 teaspoons chili powder

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • 1 teaspoon oregano

  • 2 15oz cans beans, drained

  • 1 15oz can diced tomatoes

  • Avocado, lime, sour cream for serving

Directions

  1. Heat a large skillet over medium-high heat. Add the oil, then sauté the onion until softened, 5 to 7 minutes. Add garlic and sauté until fragrant, 1 to 2 minutes longer. Add tomatoes and let simmer until the tomatoes break down, about 20 minutes.

  2. Add the chili powder, cumin, coriander, and oregano and mix thoroughly, then add the beans. Season with salt and add more spices if it is necessary. Serve with the garnishes.
