Spicy Chinese Ground Pork



This was Fiona's new recipe for my family.


Every Wednesday, we went to her house to get together for dinner, and for this weekly meal, she really enjoyed thinking about what to make for us.


Fiona loved to try new recipes and most Wednesdays we had some new food she had made. And she loved to hear our feedback!


And this spicy Chinese ground pork was really special. As her grandson and son loved it so much, she just kept making this dish, on and on. Even in the last month of her life, when she was very ill, and her sons came to be with her, she wanted to have this dish for them. Sadly, she was too sick to cook, so she asked her oldest son to cook this for dinner one day. He did and we all sat and ate next to her.





Ingredients

  • 1/2 lb ground pork

  • 2 garlic cloves, sliced

  • 1 tablespoon chopped ginger

  • 2 scallions, chopped

  • 2 1/2 tablespoons rice vinegar

  • 1 table spoon soy sauce

  • 1 teaspoon balsamic vinegar

  • 2 teaspoons water

  • 1/2 to 1 tablespoon Chinese chili oil

  • 1 teaspoon sugar

  • Salt to taste

Directions

  • Make dressing whisk together rice vinegar, soy sauce, balsamic vinegar, water, chili oil and sugar. Set aside.

  • Heat oil in a frying pan over high heat, and add ground pork and cook until the liquid is gone, about 5 minutes.

  • Add garlic, ginger and scallions, and cook for two minutes. Add a half of the dressing and cook until the mixture is darkened and thick for another 5 minutes. Add salt if needed.

  • Serve with rice or rice noodles and the remaining sauce.
