Fried Rice...did you know that I find it hard to make this?
Japanese, and other Asians find fried rice difficult to make.
Isn't that a surprise to you? Fried Rice is just stir-fry rice, eggs and a few other ingredients, like seasonings. How hard can it be?
The reason for our difficulty is that it should not stick together, it should be fluffy...
Usually when making fried rice, the rice becomes sticky, and then it takes a long time to fry till crispy. And it might burn, and become oily. Ugh...
Without a high temperature restaurant quality stove or with a serious wok it's just impossible. At least that's what many Asians think...
Well, guess what? I got a great tip from my favorite Korean-Japanese cook, Koh Kentetsu, who lives in Osaka, Japan. His technique allows you to make perfect fried rice at home! So very simple,...surprisingly simple.
Koh tells us, on his YouTube channel, that you can make fried rice with only two cooking utensils.
That's it!
I was suspicious at first, because just using two utensils to make real fried rice? No way!....
But it made the difference!
So, here's his channel where you can see the trick to make real fried rice at home. The show is in Japanese, but with English subtitles, so you should be ok. You'll at least see how he does it with just two utensils!

Ingredients
2 eggs, lightly beaten
1 small white onion, chopped
2 carrots, chopped
2 cups cooked rice
1 tablespoon ginger, chopped
2 garlic cloves, chopped
3 green onions, chopped
1 cup green peas
1-2 tablespoon soy sauce
2 teaspoon sesame oil
Oil
Directions
Heat a fry-pan over high heat and add sesame oil to the pan. Add onions, carrots and fry until soften, then add green peas and cook a few more minutes. Set aside.
Add oil and cook the ginger and garlic for a few minutes. Add eggs and rice and cook until it can be fluffed out with two utensils.
When it becomes fluffy add the vegetables and soy sauce. Pour on the sesame oil for flavor and serve hot.
