Sheet-Pan Roast Chicken with Potatoes



This one sheet pan chicken recipe is great for busy weeknight dinners. Put every thing on a sheet pan, shove it into oven, and let the oven take care of rest.


Meanwhile you can take care of other things or rest yourself. Another good thing about sheep pan recipes is less dishes to wash! So why not to love this recipe? Simple and good and a result everyone loves!


This recipe requires marinating time, so if you can do it the night before it will be easier for your next day's dinner.



Fiona was a single mom with three young boys. The sons still remember that every evening when she came back from work she was rushed through cooking.


And at that time, she didn't have this recipe, or any ideas about sheet pan recipes...


According to her sons many of her meals were a bit burned. Poor Fiona, she so rushed cooking to feed hungry mouthes...


After dinner, the kids shared the chores, washing dishes and stuff..and Fiona always said I'm going to close my eyes for just five minutes.


And of course as anyone would guess that was often the end of her day...good night.





Ingredients

  • 2 chicken thighs, bone-in and skin-in

  • 5 tablespoons olive oil

  • 3 tablespoons lemon juice, freshly squeezed is better

  • 2 garlic clove, minced

  • 1 teaspoons dried oregano

  • 1 teaspoons dried thyme

  • salt and pepper

  • 1 lb baby potatoes, halved or quartered if large

  • 1/4 cups feta cheese, crumbled

Directions

  • Throughly dry the chicken with paper towels and put in ziplock with 3 tablespoons olive oil, lemon juice, garlic, oregano and thyme. Marinate for at least 45 minutes, and longer is better! If you can marinate longer than 2 hours, put it in the refrigerator. brining back out to warm up 30 minutes before cooking.

  • Preheat oven to 425.

  • On a sheet pan drizzle potatoes with 2 tablespoons olive oil, salt and pepper.

  • Add marinated chicken and roast about 30 minutes, until the chicken is cooked through and the potatoes are tender. (And halfway through that cooking time, remove the pan from the oven, and flip the potatoes and chicken onto the other side.

  • Serve with the feta cheese.
