Roasted Cauliflower and Anchovy Pasta



Once Fiona's grand-daughter, my daughter, became a vegetarian, cauliflower became a go-to ingredient.


Fiona loved to cook meals for us, and since we lived in the same town, my family went to her house at least once a week for dinner.


I usually cook for my family, but when I was working, sometimes it was hard to cook every single day, it's just tiring. As everyone knows, thinking what to cook means thinking about what's in the fridge, which means planning a week's worth of meals and shopping for those meals!. It can be tiring, even when you love cooking.


So my husband, who thinks cooking is the worst, decided to cook once a week for me. Only once a week, lol.


However, not that long after Fiona moved to town, she wanted to cook a meal for us, of course. And before I noticed, somehow Fiona was taking over my husband's day to cook...


Anyway, this is the recipe Fiona created for everyone of us, and we loved it!





Ingredients

  • 1 head of cauliflower, cut into half inch pieces

  • 1/4 cup olive oil

  • 1/2 cup panko

  • 4 anchovy fillets

  • 3 garlic cloves, chopped

  • 1/2 teaspoon red pepper flakes

  • 2 tablespoon unsalted butter

  • 1 package pasta, your preference

  • Salt and pepper for taste

  • Parmesan cheese for serving

  • 1/4 cup parsley, chopped

Directions

  • Preheat oven to 475 F degrees.

  • Bring a large pot of water to a boil. When ready cook the pasta, 1 minute shorter than the package requirement. When done, save some of the water, reserve about 1 1/2 cups of pasta water.

  • Toss cauliflower with 2 tablespoon of olive oil, salt, and pepper.

  • Spread the cauliflower onto a baking sheet and roast until the cauliflower browns, about 20 minutes.

  • While the cauliflower is roasting, pour the rest of the olive oil into a large skillet and add the garlic. Turn the heat to medium-high and slowly fry the garlic, about 1 minute. This will infuse the flavor into the oil.

  • Add anchovy and red pepper flakes, cook for another 30 seconds, add panko, and gently fry until the panko gets golden brown.

  • Now add the roasted cauliflower, butter, pasta and 1 cup of the pasta water to the pan. Cook and mix together until the pasta is done. Add more pasta water as needed.

  • Season with salt and pepper.

  • Serve with parsley and cheese.
