
I'd never seen oatmeal cookies at Fiona's house. So I was a bit surprised when I found this recipe.
Fiona's family loves chocolate! Yes, there were always chocolate chip cookies at Fiona's. But never oatmeal ones. And when I looked at this recipe closely, of course there's chocolate, not a surprise...
Everyone knows that oats have great benefits for our health. Oats are rich in antioxidants and contain great amounts of soluble fiber which means oats may lower cholesterol levels, improve blood sugar control and digestive health and more importantly restore our gut bacteria health.
And these cookies contain walnuts which confer similar health benefits as oats. This is a well balanced treat for a sweet tooth!
Instead of using the sugar, they can be made with honey or maple syrup, and coconut oil as a butter substitution, to make them vegan cookies. Even better for a sweet tooth!
Ingredients
1 cup unsalted butter, softened
3/4 cups brown sugar
1/2 cups granulated sugar
2 teaspoons vanila extract
2 tablespoons milk
2 large eggs, beaten
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 cups old-fashioned oats
12 oz semisweet chocolate chips, about 2 cups
1 1/2 cups chopped walnuts
Directions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a bowl sift the flour, salt, baking soda, & baking powder. Set aside.
Cream the butter with the sugar in a large bowl, with a mixer or a wooden spoon.
Add the eggs one at a time, then add vanilla and milk.
Add the dry ingredients to the creamed mixture and beat to combine. Stir the chocolate chips and walnut.
Drop heaping tablespoons of dough onto the prepared baking sheet, spacing about 1 1/2 inch apart.
Bake for 10-12 minutes.
