Irish Soda Bread


Why wait for St. Patrick's day to have this delicious bread?

Irish soda bread is very simple to make, no wait for rising, and not kneading, as Irish soda bread is prepared without yeast.


Traditionally it has just four ingredients: flour, baking soda, salt, and buttermilk.

The baking soda and buttermilk react to cause the dough to rise.


In Ireland, it is often made from stone-ground whole-wheat flour. And this recipe is made with whole wheat flour and steel cut oats to create more earthy flavor.


Irish Soda Bread is simple to make - just mix all the ingredients and bake! Why not have this earthy healthy bread for an everyday meal?




Ingredients

for 2 loaves

  • 1 1/2 cups all-purpose flour

  • 3 cups whole wheat flour

  • 1/2 cup wheat germs

  • 1 1/2 cups steel-cut oats

  • 2 teaspoons baking powder

  • 1 1/2 tablespoon baking soda

  • 1 tablespoon brown sugar

  • 2 teaspoons sea salt

  • 4 1/2 cups buttermilk, room temperature

Directions

  • Preheat oven to 400 F.

  • Mix all the dry ingredients in a large bowl, add the buttermilk and stir until the ingredients are evenly moist and sticky, forming a shaggy dough.

  • Divide the dough in two. It can be used in two 9x5 lightly greased loaf pans.

  • Bake until the bread is golden and the bottom sounds hollow when tapped, about 45-50 minutes.
