This granola recipe is for those who like clumps. If you want to have big chunks, let the granola cool completely, then break up. Also using parchment paper is a good idea, so the honey stick to the oats rather than the pan. And it's much easier to clean up!
Of-course, you can add in your favorite nuts and spices and everybody's favorite - chocolate chips!!
Granola is easy to store as well, it lasts a pretty long time at room temperature in air tight containers. And it can be kept in the freezer in a ziplock bag.
Ingredients
4 cups old fashioned oats
1 cup almonds, chopped
1 cup other nuts, such as walnuts, cashews, chopped
1 teaspoon salt
1/2 cup plus 1 tablespoon honey
1/2 cup olive oil
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 cup raisins
1 cup other dried fruit, such as cranberries, blueberry
Direction
Preheat oven to 335F/170C
Combine all the ingredients well. Pour the granola onto a rimmed baking sheet with parchment paper. Bake until lightly golden, about 15 minutes, stirring halfway.
Let the granola cool completely, undisturbed about 30 minutes. Transfer to a large bowl and mix with the dried fruit.
