Homemade Pita Bread

Homemade pita bread... most people would think it's hard to make. I was one of them, but it's very simple and it's worth trying.


The ingredients are: flour, yeast, salt, sugar, and water. That's all! And the flavor of the homemade pita bread, especially when it's fresh out of the oven, is magic.


Warm, fragrant home-baked pita is just simply delicious, and it's exciting to see when the breads puff up in the oven.


Ingredients

  • 1 package of yeast (7g, 2 1/4 teaspoon)

  • 1/2 cup warm water

  • 2 cups all purpose flour

  • 1 cup whole wheat flour

  • 1 1/4 teaspoon salt

  • 1 teaspoon sugar

  • 1 cup warm water


Directions

  • Dissolve yeast with 1/2 cup warm water and sugar in large bowl. Let it sit until the mixture is frothy about 15 minutes.

  • Add flours, salt and 1 cup of water. With a wooden spoon or a dough scraper, stir until the mixture forms a mass. Turn dough onto clean work surface and kneed about 10 minutes or until smooth.

  • Coat lightly with oil and put the dough in large bowl and cover tightly with plastic wrap (I use a shower cap).

  • Let the dough rise until it has doubled in size (about 1-3 hours, it depends on the environment - temperature and season.)

  • Heat oven to 475 F/245 C. On bottom shelf of oven, place a heavy duty baking sheet or large cast iron pan.

  • Punch down the dough and divide into 8 pieces.

  • Form each piece into a ball, cover them with a damp kitchen bowl and leave for 10 minutes.

  • Work one at a time, press each ball of dough into a flat disc with your hand or rolling pin to a 6 inch/15cm diameter disc, dust with flour if necessary. Place quickly on hot baking pan. Cook for 2 minutes, carefully turn over with tongs and cook another 1 minute.
