
This plain muffin recipe must come from when Fiona's boys were small. You can see her chart with names and tasks they had to do. Fiona must have loved the result and kept the recipe with memories, a ripped and browned paper. You can imagine a young mother Fiona and her sons baking together with joy.
This muffin is not too sweet so it's great with butter and raspberry jam. Or you can add chopped jalapeño and have it with chili in winter.
Ingredients
2 cups flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk
1/4 cup vegetable oil
Directions
Preheat oven to 400F/200C
Sift together flour, salt and baking powder. Lightly beat egg, then add milk and oil.
Make a well in dry ingredients and add the wet ingredients. Stir just until moist (it will be lumping and thick). Fill muffin cups 2/3 full. Bake 20-25 minutes.
