Fiona's Tomato Sauce



If you have some free time, consider making your own slow-cooked tomato sauce. It offers a refreshing flavor that captures the natural tartness and sweetness unique to fresh tomatoes.


This sauce is rich and flavorful, perfect for enhancing your dishes. It is versatile, ideal for classics like pasta and pizza, or as a complement to stewed dishes and sautéed chicken.


While commercially available products are convenient, homemade sauce boasts a richer tomato flavor.


Homemade tomato sauce can be stored for one week in the refrigerator or three months in the freezer.

Ingredients

  • 1/2 cup olive oil

  • 1/4 cup fresh basil, chopped

  • 4 cups Roma tomatoes, skinned and chopped

  • 6 oz tomato paste

  • 1 large onion, chopped

  • 1 tablespoon dried oregano

  • 1 teaspoon salt

  • 1 tablespoon black pepper

  • 2 cups water

  • 1 cup red wine

  • 5 garlic cloves, minced

  • 1/2 cup parsley, minced


Directions

  • In a large pot over medium-low heat, add the garlic and olive oil and cook until fragrant, about a few minutes. Then add the onions and caramelize slowly over low heat to bring out the sweetness of the onions.

  • Add the tomatoes, tomato paste, basil, oregano, salt and pepper and cook another 10 minutes.

  • Add the water and wine, bring to boil and turn the heat down to low, cook slowly for 3 hours, uncovered.

  • Stir in the garlic and parsley and cook another 5 minutes. Taste and adjust for the seasoning.
