Else's Nut Cake



This recipe is from Fiona's younger sister Else who had a winter house in Spain.


In Spain, this cake is called Tarta de Santiago or St. James’ cake and in Spain it can be easily recognize by the St. James’ cross in the middle.


This simple cake is very popular in Spain and requires only 4 ingredients, nut flour, flour, sugar, and eggs. You can even make it without flour, so really, only 3 ingredients are required!


So, I'm guessing Else made this when she was in Spain.


Else lived in Norway in the summer and Spain in the winter, away from the harsh winters of Norway. When Fiona lived in New York State, before she moved to Colorado where winters are mild, she would visit her sister in Spain, and it must have been nice to get away from the harsh winters of New York State.


I can imagine those two sisters smiling and chatting and enjoying their wonderful sisterhood while eating Else's nut cake in the Spanish sunshine.




Ingredients

  • 2 cups almond flour

  • 1 cup granulated sugar

  • 4 eggs

  • 1 1/2 tablespoons flour

  • Powder sugar for dusting

You can also add other things for flavor, here are some ideas

  • 1 tablespoon lemon zest

  • 1 tablespoon orange zest

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon spice

  • 1 tablespoon liquor such as amaretto

If you want to make a gluten free version, just opt out the flour.


Directions

  • Grease a 10 inch Springform pan with butter and line a parchment paper on the bottom.

  • Preheat the oven to 350F/175C degrees.

  • Beat the eggs and sugar until the mixture is pale and thick. Fold the almond flour and flour, if using, in and mix throughly, don't over mix.

  • Pour the batter into the prepared pan and bake for 45-50 minutes or until the cake is golden brown and feels firm to the touch.

  • After it is completely cooled, dust with powder sugar.
