Creamy Pumpkin Soup

Do you know what is the difference between sweet potatoes and yams?

I was surprised the first time I went to a grocery store in America, there are a few kinds of yams or sweet potatoes. Because where I came from, where is Japan, there is only one kind of sweet potato.


In America, it seems like sweet potato and yams are used interchangeably. But, as the name suggests, sweet potato taste is much sweeter than yams and sweet potato have more dense in nutrients such as Vitamin A, potassium and fiber. They are also originated in the New World.


Yams are native to Africa and Asia. They are a tropical staple food and come in different shape and sizes.



Ingredients

  • Olive oil

  • 1 medium onion, chopped

  • 1 garlic clove, chopped

  • 2 teaspoon grated ginger

  • 1 teaspoon ground cumin

  • 1/2 teaspoon turmeric

  • 1/4 teaspoon ground coriander

  • 1/8 teaspoon ground cardamon

  • A pinch of red pepper flakes

  • 1 large sweet potato, peeled and 1/2 inch cubed

  • 3 cups vegetable stock

  • Salt and white pepper to taste

  • Cheese for serving, (parmesan, Feta, your preference)

 

Directions

  • Heat oil in a large pot on medium high heat. Sauté the onion until soft and brown about 10 minutes. Add garlic and sauté for 30 seconds.

  • Add all the spices and stir well. Add the sweet potatoes and stock, and bring to a boil. Reduce the heat and simmer for about 20 minutes, until the sweet potatoes are soft.

  • Puree the soup in batches in blender. Blend until smooth. If the soup is too thick add additional stock and blend. Season to taste with salt and white pepper.
