Cranberry Bread

The recipe said bread, but it's more like a bundt cake. When I tried this recipe I used a bundt pan.


If you want to have more orange flavor, just change the water to use 1 1/2 cup orange juice.





Ingredients

  • 1 1/2 cups cranberries fresh or frozen

  • 1 1/2 tbsp grated orange zest

  • 3 tbsp granulated sugar

  • 3 cups all in purpose flour

  • 1/2 tsp baking soda

  • 3 tsp baking powder

  • 3/4 tsp salt

  • 1 1/4 cups sugar

  • 2 large eggs, lightly beaten

  • 3/4 cups orange juice, freshly squeezed

  • 3/4 cups water

  • 1/2 cup butter, melted

  • 1 cup walnuts, roughly chopped


Directions

  • Preheat oven to 350 F/175 C. Butter and flour a 10 cup capacity pan.

  • Put cranberries in food processor to roughly chop and transfer to medium bowl. Add orange zest and 3 tbsp sugar, mix throughly and set aside.

  • Sift together flour, baking soda, baking powder, salt and sugar in large bowl and set aside.

  • Whisk together eggs, orange juice, water and melted butter in medium bowl.

  • Pour wet mixture into dry mixture and mix to combine.

  • Fold in cranberry mixture and nuts.

  • Pour batter into the prepared pan and bake for about 1 1/2 hours.
