The recipe said bread, but it's more like a bundt cake. When I tried this recipe I used a bundt pan.
If you want to have more orange flavor, just change the water to use 1 1/2 cup orange juice.
Ingredients
1 1/2 cups cranberries fresh or frozen
1 1/2 tbsp grated orange zest
3 tbsp granulated sugar
3 cups all in purpose flour
1/2 tsp baking soda
3 tsp baking powder
3/4 tsp salt
1 1/4 cups sugar
2 large eggs, lightly beaten
3/4 cups orange juice, freshly squeezed
3/4 cups water
1/2 cup butter, melted
1 cup walnuts, roughly chopped
Directions
Preheat oven to 350 F/175 C. Butter and flour a 10 cup capacity pan.
Put cranberries in food processor to roughly chop and transfer to medium bowl. Add orange zest and 3 tbsp sugar, mix throughly and set aside.
Sift together flour, baking soda, baking powder, salt and sugar in large bowl and set aside.
Whisk together eggs, orange juice, water and melted butter in medium bowl.
Pour wet mixture into dry mixture and mix to combine.
Fold in cranberry mixture and nuts.
Pour batter into the prepared pan and bake for about 1 1/2 hours.
