Coconut and Nuts Granola

Classic granola is great for breakfast and as a snack. And it's full of vitamins, minerals and dietary fiber that we all need for our gut health. It's very easy to make and better than a commercial product!


My family eats granola pretty much every morning, with yogurt and seasonal fruits. We used to buy granola, but my husband, Fiona's second son, couldn't find his favorite and so he has decided to make by his own to control the sweetness, amount to nuts, dry fruits and such.


This is a great granola recipe for those who prefer not so crunchy a granola.




Ingredients

  • 3 cups old-fashioned rolled oats

  • 1 cup sliced almonds

  • 1/2 cup cashews, coarsely chopped

  • 1/2 cup walnuts, coarsely chopped

  • 3/4 cup shredded sweet coconuts

  • 1/4 cup brown sugar

  • 1/4 cup maple syrup

  • 1/4 cup vegetable oil

  • 1/2 teaspoon salt

  • 1 cup raisins

Directions

  • Preheat oven to 250F/120C

  • In a large bowl, combine the oats, nuts, coconut, and brown sugar. Pour the maple syrup and oil over and mix evenly. ( I prefer to mix with my hands.)

  • Pour onto a sheet pan and bake for 1 hour and 20 minutes. Stirring every 20 minutes.

  • Once it's slightly cool enough to handle, transfer to a large bowl and add raisins.
