Blueberry Muffin 2

I believe this recipe is from me.....a long time ago. When she visited us she enjoyed my blueberry muffins and asked for the recipe. It was nice seeing this among her recipes.


A tip for this recipe is to crush some of the blueberries before folding in the batter. That way the muffins are enhanced with more flavor from the blueberries.



Ingredients

  • 1/2 cup butter room temperature

  • 1 cup sugar

  • 2 eggs

  • 1/2 cup milk

  • 1 teaspoon vanilla

  • 2 cups flour

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 2 tablespoons sugar

Directions

  • Preheat oven to 375F/190C

  • Sift together flour, salt and baking powder, set it aside.

  • Cream butter and sugar until pale yellow, light and fluffy. Then add eggs one at a time.

  • Add vanilla.

  • Add dry ingredients alternately with the milk.

  • Crush 1/2 cup blueberries with a fork or a masher and fold into the batter with remaining blueberries. Sprinkle the 2 tablespoons of sugar over the top of the muffins. Bake for 30 minutes or until a tester comes out clean.
